Ingredients
  

For the Salmon Bites
  • 1 lb fresh salmon, skinless and cut into bite-sized cubes Use firm salmon for best results.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup panko breadcrumbs For a crunchy texture.
  • 1 tbsp olive oil or cooking spray To help with browning.
For the Bang Bang Sauce
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for lower calories.
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha Adjust to taste for desired spice level.
  • 1 tsp honey (optional)
  • Juice of 1/2 lime lime
For Serving
  • 2 cups cooked jasmine rice or cauliflower rice Choose based on dietary preference.
  • 1 cup shredded purple cabbage For color and crunch.
  • 1 large avocado, sliced
  • 1/2 cup shredded carrots
  • 2 each green onions, sliced For garnish.
  • Fresh cilantro for garnish
  • Sesame seeds for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or set your air fryer to 390°F (200°C).
  2. In a mixing bowl, toss the salmon cubes with garlic powder, smoked paprika, salt, and black pepper.
  3. Coat each salmon cube thoroughly in panko breadcrumbs.
  4. Arrange the coated salmon on a baking tray or in your air fryer basket.
Cooking
  1. Bake for 12-14 minutes or air fry for 8-10 minutes, flipping halfway through.
  2. While the salmon is cooking, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and optional honey for the Bang Bang sauce.
Assembly
  1. Layer cooked jasmine or cauliflower rice at the bottom of serving bowls.
  2. Add shredded cabbage, avocado slices, and shredded carrots over the rice.
  3. Top with crispy salmon bites and drizzle with the Bang Bang sauce.
  4. Garnish with green onions, fresh cilantro, and sesame seeds before serving.

Notes

For marinated salmon, let it sit in spices for 1-2 hours before cooking for better flavor. Experiment with veggies and consider using different proteins for variety.
